Clever Brewed Coffee…
Real quick. Many people have not yet been introduced to this wonderful method of brewing coffee. Many people use a french press at home, in lieu of a drip coffee. If you can brew french pressed coffee at home you can also brew using the clever.
Both methods are considered “full immersion” brews, meaning that the water and coffee grinds sit together throughout the extraction process. Alternative methods like a chemex, bon-mac, bee-house, etc are not full immersion. As you pour water over the grinds, coffee is slowly released through holes at the bottom of the filter. In general you tend to get more body in your coffee using a full immersion brew since the grinds sit with the water throughout the process. So if you like nice body to your brew…
The clever differentiates itself from the french press in a few ways:
-you use a finer grind
-you use a paper filter
-the clever is v shaped as opposed to a cylinder, giving you a different extraction
-the “release” of the coffee occurs by dropping the clever on top of a cup, releasing the coffee slowly instead of pressing and pouring.
The result is a smooth, full bodied coffee that brings out the best in just about any coffee. In last year’s brewer’s cup championships 3/4 finalists used the clever as their brew method of choice, so take it from the best, the clever is worth a shot!
